Preserving Your Potato Harvest

My neighbor over the back fence had some garden he didn’t know what to do with so I gave him half a bag of sprouting potatoes, because he had never grown potatoes before. He planted them and then asked what was the best way to plant them (because this is how we do things, right?)
I have planted in trenches, with compost, in my compost piles, in hills, in piles of chips, and I am experimenting with flipping sods to make lazy-beds.
I don’t think there is a best way, just what is best to take advantage for your watering style and rainfall. I am not impressed so far with the Irish lazy-bed planting, but we are very dry in the summers and the purpose of that style of planting seems to be to get the spuds above the sodden soil layer and give some drainage.
